Charles' Nachos

  1. Cook Ground Sirloin in a large skillet over medium heat. Make sure to break meat up as it cooks into smaller pieces. Drain any fat or water. Leave the meat in Skillet.
  2. Saute onions in a smaller skillet. Just until opaque and caramelized. Add to drained and cooked Sirloin.
  3. Add 1 can undrained Rotel Tomatoes. Stir into mix.
  4. Turn skillet onto a low setting. Add your cubed cheese. Stir frequently to mix completely.
  5. Mix should be smooth and creamy with cheese. Add more cubed Velveta if necessary.
  6. Serve over chips with jalapeno slices! Yum!
  7. Also can be served as a party dip!
