Senator Russell Sweet Potatoes
- Potatoes:
- Enough sweet potatoes to make 31/2 cups mashed sweet potatoes (I used
- the ones from the can, but obviously you can use fresh)
- 1/2 cup sugar
- 2 eggs
- 1 teaspoon vanilla
- 1/2 cup milk
- 1/4 cup butter, softened ( margarine would work, I'm sure)
- Topping:
- 1/2 cup brown sugar
- 1/3 cup flour
- 1/4 cup butter, melted
- 1 cup pecans
- Sweet potatoes:
- 1. Bake sweet potatoes at 450 for 1 hour.
- 2. Scoop potato from shells.
- 3. Combine potatoes, sugar, eggs, vanilla, milk, and butter.
- 4. Place in large casserole.
- Topping:
- 1. Combine brown sugar, flour, butter, and pecans.
- 2. Place on top of potatoes in casserole.
- 3. Cover casserole. (This can be made a day ahead up to this point.)
- 4. Bake in oven at 275 for 50 minutes.
- 5. Uncover for last 10 minutes of baking.
