Chocolate Ice Cream Sandwiches
- 3/4 cup all-purpose flour, sifted
- 2/3 cup cocoa powder, sifted
- 1/2 tsp baking powder
- 3/4 cup butter, at room temperature
- 1 tsp vanilla extract
- 1/2 cup granulated sugar
- 2 None eggs
- 1 tbsp milk
- 4 cups chocolate ice cream, slightly softened
- Preheat oven to 350u0b0F. Combine flour, cocoa powder, baking powder and 1/4 tsp salt. Cream butter, vanilla and sugar until pale and fluffy. Beat in eggs and milk then add flour mixture and mix until just combined. Shape into 2 flat discs. Wrap in plastic wrap and chill for 1 hour.
- Roll dough out then cut into 2 1/2 inch discs. Transfer to a baking sheet lined with parchment paper. Chill for 30 mins, until firm. Prick cookies with a fork. Bake for about 15 mins, until firm. Let cool on a wire rack.
- Sandwich chocolate ice cream between cooled cookies. Use a palette knife to clean around edges. Freeze until firm.
