Citrus And Coconut Nut Bread
- 3 None egg whites
- 1/2 cup sugar
- 1 cup flour
- 3/4 cup mixed nuts
- 1/2 cup flaked coconut
- 2 tsp finely grated lemon peel
- 2 tsp finely grated orange peel
- 2 tsp finely grated lime peel
- Preheat the oven to 350u0b0F. Grease an 8 x 4-inch loaf pan.
- Beat egg whites in a small bowl with an electric mixer until soft peaks form. Gradually add sugar, beating until sugar dissolves.
- Transfer mixture to a large bowl. Stir in sifted flour, nuts, coconut and citrus peels. Spread mixture into prepared pan.
- Bake about 30 mins. Cool in pan 5 mins. Remove from pan; cool completely on wire rack. Wrap bread in foil. Let stand overnight.
- Preheat the oven to 250u0b0F. Using a serrated knife, cut bread into wafer-thin slices. Place slices, in a single layer, on ungreased baking pans.
- Bake about 45 mins, turning halfway through baking time, or until dry and crisp. Cool bread on wire racks.
