Olive And Parmesan Loaf
- 1/4 cup warm milk
- 1/4 cup olive oil
- 3 1/2 tsp active dry yeast (or 1 oz fresh)
- 4 1/3 cups all-purpose flour
- 1 tbsp salt
- 1 1/2 oz grated Parmesan cheese
- 2 oz sliced pitted black and green olives
- Preheat oven to 400u0b0F. Lightly grease a 5x8 inch loaf pan. Combine warm milk and olive oil with 1 cup warm water. Add yeast and stir to combine. Set aside for 5 mins, until foamy.
- Sift flour and salt into a large bowl. Add Parmesan and olives. Pour yeast mixture into flour and mix until combined. Transfer to a floured work surface and knead until smooth. Divide dough into 5 pieces and shape into rounds. Arrange in loaf pan, cover with a tea towel and proof until doubled in size (about 30 mins).
- Bake for 30-35 mins, until loaf sounds hollow when tapped on the bottom. Let cool on a wire rack.
