Baked Potatoes With Baked Beans
- 4 large baking potatoes, scrubbed
- 1/4 cup finely chopped salami or pepperoni
- 1/4 cup grated Cheddar cheese
- 2 tsp snipped fresh chives
- 1 can (8 oz) baked beans
- Preheat the oven to 350u0b0F. Line a baking pan with parchment paper.
- Pierce potatoes in several places with a skewer. Arrange on turntable of microwave. Cook on high for 12-14 mins, until tender.
- Meanwhile, in a small bowl, combine salami, cheese and chives. Cut a small slice off bottom of each potato to allow them to sit flat. Using a teaspoon, scoop out about 1/2 inch of potato center.
- Chop excess potato and mix with salami mixture. Place potatoes on prepared pan. Spoon an even amount of baked beans into each potato. Divide salami mixture between potatoes.
- Bake for 10-15 mins, until topping is crispy.
