Hearty Vegetable Chowder
- 1 (10 3/4 oz.) can chicken broth (undiluted)
- 2/3 c. water
- 4 c. frozen mixed vegetables
- 1/4 c. minced onion
- 1/4 c. minced green pepper
- 3 Tbsp. butter or margarine, melted
- 1/4 c. all-purpose flour
- 1/2 tsp. paprika
- 1/2 tsp. dry mustard
- 2 c. milk
- 1/8 tsp. pepper
- 2 c. (8 oz.) shredded Cheddar cheese
- Combine chicken broth and water in a saucepan.
- Bring to a boil.
- Add mixed vegetables.
- Cook 15 minutes until tender. Saute onion and pepper in Dutch oven until tender.
- Blend in flour, paprika and mustard.
- Gradually add milk, vegetables and broth.
- Cook over medium heat, stirring constantly, until mixture comes to a boil.
- Remove from heat.
- Add cheese and pepper.
- Stir until cheese melts.
- Yield: 7 cups.
