Stuffed New Potatoes

  1. Cook potatoes in salted boiling water for 25-30 mins until tender.
  2. For the mushroom filling, heat 2 tbsp oil in a large frying pan and saute mushrooms over high heat for 3 mins until golden. Add onions and garlic and cook for 1-2 mins.
  3. For the shallot and apple filling, heat remaining oil in a large pan and sweat shallots until just tender. Add diced apple and cook for 2 mins then add vinegar and bring to a boil for 1 min. Add 1-2 sprigs thyme and season to taste.
  4. Drain potatoes and split each one in 1/2. Season lightly with salt then fill 1/2 with mushroom filling and the rest with shallot and apple filling. Garnish with thyme sprigs and baby salad greens.
