Stuffed New Potatoes
- 8 None large new potatoes (about 200g), scrubbed
- 8 tbsp vegetable oil
- 400 g small mixed mushrooms, wiped and halved
- 2 None onions, peeled and finely chopped
- 1 None garlic clove, peeled and crushed
- 4 None shallots, peeled and sliced
- 1 large red apple, cored and diced
- 2 tsp cider vinegar
- few None sprigs fresh thyme
- few None micro salad leaves, optional
- Cook potatoes in salted boiling water for 25-30 mins until tender.
- For the mushroom filling, heat 2 tbsp oil in a large frying pan and saute mushrooms over high heat for 3 mins until golden. Add onions and garlic and cook for 1-2 mins.
- For the shallot and apple filling, heat remaining oil in a large pan and sweat shallots until just tender. Add diced apple and cook for 2 mins then add vinegar and bring to a boil for 1 min. Add 1-2 sprigs thyme and season to taste.
- Drain potatoes and split each one in 1/2. Season lightly with salt then fill 1/2 with mushroom filling and the rest with shallot and apple filling. Garnish with thyme sprigs and baby salad greens.
