Chocolate Chipotle Spice Strawberry Cake

  1. Preheat oven to 350u0b0F. Grease 2 - 8 inch cake pans.
  2. Prepare cake according to package directions adding chipotle pepper, cinnamon, and 1/2 cup diced strawberries. Distribute between cake pans and bake for 25 mins, or until a skewer inserted in the center comes out clean. Let cool for 10 mins then unmold and let cool completely.
  3. Meanwhile, combine evaporated milk and melted chocolate in blender. Blend on high for 30 seconds, or until thick. Transfer frosting to a bowl and let stand for 1 hour.
  4. Place 1 cake layer on a serving platter. Spread with 1/2 the frosting. Cover with second cake layer and spread with remaining frosting. Transfer Cool Whip to a pastry bag fitted with a star tip, like Wilton 1M and pipe decorative swirls on cake. Garnish with sliced strawberries, hot peppers, and mint, if desired.
