Spicy Asian Lettuce Snacks With Chicken
- 1 tbsp peanut oil
- 2 clove garlic, crushed
- 3 None small pieces ginger, grated
- 1 lb ground chicken
- 1/3 cup tomato sauce
- 1/3 cup oyster sauce
- 1/2 cup chopped bamboo shoots
- 1/2 cup chopped, drained water chestnuts
- 1/2 cup cilantro, roughly chopped, plus extra to serve
- 1 None long red chili pepper, deseeded and finely sliced, to serve
- None None lime wedges, to serve (optional)
- Heat peanut oil in wok or large frying pan, on high. Stir-fry garlic and ginger for 1 min, or until fragrant. Add chicken and stir-fry 3-5 mins, until browned, breaking up lumps with a wooden spoon. Stir in sauces, bamboo shoots and water chestnuts, then remove from heat. Stir in chopped cilantro, then spoon mixture onto lettuce leaves. Arrange on a plate and top with chili pepper and extra cilantro, to serve. Accompany with lime wedges, if using.
