Vegetable Chow Mein
- 2 tbsp soy sauce
- 1 tbsp sugar
- 2 tsp ground star anise
- 2 tbsp peanut oil
- 3 None eggs
- 2 tbsp sesame seeds, toasted
- 2 tsp sesame oil
- 1 None onion, sliced
- 2 cloves garlic, crushed
- 1 None carrot, cut into thin strips
- 1 None red pepper, seeded and sliced
- 1 None celery stalk, thinly sliced, plus celery leaves, for garnish
- 4 oz snow peas, trimmed and sliced
- 1/2 cup canned bamboo shoots
- 12 oz thin Chinese egg noodles
- None None Sliced green onion, to serve
- Whisk soy sauce, sugar and star anise in small bowl. Set aside.
- Heat 1 tbsp of the oil in a wok or large skillet on medium-high heat. Whisk eggs, sesame seeds and oil in medium bowl. Pour into pan and swirl mixture around to cover bottom of pan. Cook for 1 min, until the top starts to set. Loosen the edges with a spatula. Flip over edges to fold, and remove. Slice and set aside.
- Heat remaining 1 tbsp oil in same pan on high heat. Stir-fry onion and garlic for 1 min, until onion is tender. Add carrot and stir-fry for 1-2 mins. Add pepper, celery, snow peas and bamboo shoots. Stir fry for 1-2 mins, until vegetables are tender. Add noodles and reserved sauce. Stir-fry for 2 mins.
- Serve chow mein topped with omelet, green onion and celery leaves.
