Summer Chicken And Vegetable Casserole
- 2 tbsp olive oil
- 400 g chicken fillets, cut into large pieces
- 1 medium onion, finely diced
- 1 red pepper, cut into pieces
- 1 green pepper, cut into pieces
- 1 yellow pepper, cut into pieces
- 500 g courgette, sliced thick
- 2 cloves garlic, finely diced
- 1/2 bunch thyme, chopped
- 1 tsp paprika
- 1 tsp ground cumin
- 4 medium eggs
- 200 ml semi-skimmed milk
- 1/2 tsp nutmeg
- 50 g cheddar cheese, grated
- Heat oil in a pan and fry the chicken on all sides until golden brown. Remove then in the same pan saute the onions, peppers and zucchini. Add the garlic and thyme, season with salt, pepper, paprika and cumin and cook for another 4-5 minutes over a medium heat.
- Preheat oven to 350u0b0F. Transfer vegetables to a greased baking dish and top with chicken. Mix together the eggs and milk, season with salt, pepper and nutmeg and pour over the chicken and vegetables. Sprinkle with cheese and bake for 35-40 minutes until golden brown.
