Green Beans Salad

  1. In a large bowl, whisk together olive oil, vinegar, mustard, garlic and thyme. Season with salt and black pepper, if desired.
  2. Place beans and 3 tablespoons of water in a microwave-safe bowl. Cover and cook on high for 3-4 mins or until tender. Rinse in cold water. rnrnAlternative cooking method: in a pot over high heat, boil enough salted water to cover the beans. Cook beans for 3-4 mins or until tender. Rinse in cold water. rnrnToss beans, tomatoes and pepper together with vinaigrette.
  3. In a bowl combine the beans, tomatoes, pepper and lettuce and mix with dressing.
