Green Beans Salad
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1/2 tsp Dijon mustard
- 1 tsp chopped garlic
- 1 tsp chopped fresh thyme leaves
- 1/2 lb green and / or yellow beans
- 3/4 cup small halved grape tomatoes
- 1 None small yellow pepper, diced
- None None curly leaf lettuce, for garnish
- In a large bowl, whisk together olive oil, vinegar, mustard, garlic and thyme. Season with salt and black pepper, if desired.
- Place beans and 3 tablespoons of water in a microwave-safe bowl. Cover and cook on high for 3-4 mins or until tender. Rinse in cold water. rnrnAlternative cooking method: in a pot over high heat, boil enough salted water to cover the beans. Cook beans for 3-4 mins or until tender. Rinse in cold water. rnrnToss beans, tomatoes and pepper together with vinaigrette.
- In a bowl combine the beans, tomatoes, pepper and lettuce and mix with dressing.
