Cheesy Tuna Casserole
- 2 cups cooked macaroni
- 3 cans (5 oz each) tuna in springwater, drained
- 1 jar (10 oz) artichoke hearts, drained and quartered
- 1 cup sour cream
- 2 oz thin green beans, trimmed and cut into 1-inch lengths, blanched
- 1/4 cup sliced green olives
- 1/4 cup coarsely chopped fresh parsley
- 1 None lemon, juiced
- 1 tbsp capers
- 1 cup grated mozzarella cheese
- 1/4 cup grated Parmesan cheese
- Preheat the oven to 350u0b0F.
- Combine the cooked pasta, tuna, artichokes, sour cream, beans, green olives, parsley, lemon juice and capers in a large bowl. Season to taste.
- Spoon the mixture into baking dish. Combine the cheeses in a bowl, then sprinkle over the pasta.
- Bake for 15-20 mins, until golden.
