Veal Fricassee

  1. Melt butter in a large saucepan over medium heat. Cook veal and onions, covered, until onions are soft. Stir in flour and cook, stirring, for 3 mins. Stir in wine, stock, pepper and herbs. Simmer, covered, for 45 mins, or until veal is tender.
  2. Just before serving, stir in egg yolks, cream, nutmeg and lemon juice. Stir until hot. Serve.
