Veal Fricassee
- 6 1/2 tbsp butter
- 3 1/3 lb diced veal
- 2 None large Spanish onions, thickly sliced
- 1/2 cup all-purpose flour
- 1/4 cup dry white wine
- 3 cups chicken stock
- 1 tsp cracked black pepper
- 1 tbsp fresh parsley leaves, coarsely chopped
- 2 tsp fresh thyme leaves, coarsely chopped
- 3 None large egg yolks
- 1/2 cup heavy cream
- 1/4 tsp ground nutmeg
- 2 tsp lemon juice
- Melt butter in a large saucepan over medium heat. Cook veal and onions, covered, until onions are soft. Stir in flour and cook, stirring, for 3 mins. Stir in wine, stock, pepper and herbs. Simmer, covered, for 45 mins, or until veal is tender.
- Just before serving, stir in egg yolks, cream, nutmeg and lemon juice. Stir until hot. Serve.
