Baked Polenta Crêpes
- 3.5 oz instant polenta
- 1/4 cup all-purpose flour
- 4 None eggs, lightly beaten
- 5.25 oz baby spinach, chopped
- 5.25 oz ham, chopped
- 3.5 oz feta cheese, crumbled
- 1 None long red chili, finely chopped
- 3/4 cup tomato salsa
- 2 oz grated cheese
- Preheat oven to 350u0b0F. Lightly grease a large baking dish. Combine polenta, flour and 1/2 tsp salt. Make a well in the center. Add eggs and 1 cup water. Stir until just combined.
- Lightly coat a crepe pan with oil. Heat over medium heat, add 1/4 cup batter into pan, tilting to coat base. Cook for 1 min then flip and cook for another 30 seconds. Slide onto a plate and repeat with remaining batter.
- Combine spinach, ham, feta and chili. Divide filling between crepes then roll up, leaving ends open. Place in prepared baking dish, seam-side down. Pour salsa over top and sprinkle with cheese. Bake for 10-15 mins, until cheese melts and filling is hot.
