Mandarin Orange And Passionfruit Cake

  1. Preheat oven to 350u0b0F. Grease a 9-inch round cake pan and line base and sides with parchment. Sprinkle the brown sugar over base of prepared pan. Arrange the mandarin segments, in a single layer, over the sugar.
  2. Using an electric mixer, beat the butter, sugar and extract, until light and creamy. Add the eggs, one by one, beating well after each addition. Stir in flour, milk and passionfruit pulp. Carefully spread the mixture over the mandarins and smooth the top.
  3. Bake for 50-55 mins, or until a skewer inserted into the center of the cake comes out clean. Cool in the pan for 10 mins then turn out onto a wire rack to cool completely.
  4. Using a sharp serrated knife, cut the cake in half horizontally. Place the base of cake on a serving plate and spread with the cream. Top with the remaining cake. Serve.
