Beef And Mushroom Pilaf
- 2 tbsp olive oil
- 7 oz button mushrooms, thickly sliced
- 1 lb beef sirloin steak, cut into strips
- 2 cloves garlic, crushed
- 1 1/2 cups long grain rice
- 1 1/2 cups beef stock
- 2 tbsp tomato paste
- 1/2 cup sour cream
- 2 tsp snipped fresh chives
- Heat 2 tsp of the oil in a large saucepan on high heat. Cook mushrooms for 2-3 mins, until golden brown and tender. Remove from pan.
- Heat 2 tsp oil in pan on high heat. Cook beef in batches for 2-3 mins, until browned. Remove from pan.
- Heat remaining 2 tsp oil in a pan on medium-high heat. Add garlic and rice and stir to coat. Add stock, tomato paste and 1 cup water. Stir to combine. Bring to a boil. Reduce heat to low; cover and simmer, without lifting lid, for 15 mins, until rice is tender. Stir in beef and 1/2 the mushrooms. Cook for 1-2 mins, until heated through.
- Combine sour cream and chives and season to taste. Top pilaf with sour cream mixture and remaining mushrooms. Serve.
