Champagne Fruit Salad With Mint Lime Granita
- None None FOR THE MINT LIME GRANITA
- 1/3 cup lime juice, plus 4 wide strips peel
- 1/4 cup sugar
- 1 None peppermint tea bag
- 2 tbsp chopped mint, plus additional leaves, to serve
- None None FOR THE CHAMPAGNE FRUIT SALAD
- 1/2 None papaya, peeled, seeded and sliced
- 1/2 None honeydew melon, peeled, seeded and sliced
- 1/2 None pineapple, peeled, cored and thinly sliced
- 9 oz strawberries, halved
- 1 None Granny Smith apple, sliced
- 1 cup sparkling white wine
- For the granita, combine 2 cups water, lime juice and sugar in medium saucepan on low heat. Stir until sugar dissolves. Add lime peel and tea bag and bring to a simmer. Remove from heat. Let steep for 3-4 mins. Remove tea bag and lime peel. Cool.
- Stir in chopped mint and transfer to a shallow metal tray. Freeze for 2-3 hours until firm.
- For the fruit salad, combine all fruit in a large glass bowl. Pour wine over top. Refrigerate, covered, until ready to serve.
- Spoon fruit salad into glasses. Using a fork, scrape granita to form ice chips. Spoon over fruit. Serve with mint leaves.
