Fruit And Nut Fudge
- 1 cup whole mixed nuts, roasted
- 1/2 cup raisins
- 2 cans (14 oz each) sweetened condensed milk
- 1 3/4 cups packed brown sugar
- 1 cup (2 sticks) butter, chopped
- 1/2 cup light corn syrup
- 1/4 cup dark corn syrup
- 1 tsp rum or vanilla extract
- 5 oz semi-sweet chocolate, melted
- Lightly grease an 11 x 8 inch baking pan and line with parchment paper. Sprinkle nuts and raisins evenly on bottom of pan.
- Place condensed milk, sugar, butter, syrups and extract in a large heavy-bottom saucepan on low heat. Stir until sugar dissolves. Increase heat to medium and bring to a boil. Cook, stirring constantly, for 12-15 mins, until mixture turns a dark caramel color.
- Pour into pan, smoothing top. Drizzle with chocolate. Refrigerate overnight until firm. Cut into 1-inch squares. Store in an airtight container in the refrigerator.
