Honey-Glazed Chicken Drumsticks With Salsa
- 18 None chicken drumsticks
- 2 tbsp runny honey
- 1 tsp chili powder
- 5 tbsp olive oil
- 6 None tomatoes, deseeded and diced
- 1 None green pepper, deseeded and cut into rings
- 1 None red chilli, deseeded and finely chopped
- 2 None onions, peeled and finely diced
- 1 None lime, grated zest and juice
- 2 cloves garlic, peeled and crushed
- 1 pinch super fine sugar
- Preheat the oven to 400u0b0F. Grease a roasting pan. Season with drumsticks with salt and arrange in the roasting pan. Cook for 30 minutes, or until the juices run clear. Mix the honey, chili powder and 1 tbsp oil and brush over the drumsticks 5 minutes before the end of cooking.
- In a bowl, mix the tomatoes, pepper, chili, onions, lime zest, garlic and 4 tbsp oil. Season with salt, black pepper and a pinch of sugar. Stir in a few drops of lime juice to taste.
- Remove the drumsticks from the oven and serve with the salsa.
