Florentines
- 2 cups corn flakes
- 1/2 cup raisins
- 3 oz chopped mixed glace cherries
- 1/2 cup slivered almonds
- 1/2 cup finely chopped nuts
- 2 tbsp chopped candied citrus peel
- 1 tbsp finely chopped candied ginger
- 1/4 tsp ground ginger
- 2/3 cup sweetened condensed milk
- 6 oz dark chocolate, melted
- Preheat oven to 350u0b0F. Line 2 baking trays with parchment paper.
- Combine corn flakes, raisins, cherries, almonds, nuts, citrus peel, candied ginger and ground ginger in a large bowl. Add condensed milk and stir to combine. Place slightly rounded tablespoons of mixture on prepared trays, leaving room for spreading. Bake for 10-12 mins, or until golden brown. Let cool on trays.
- Line a large baking tray with parchment paper. Spread melted chocolate over cookies and place, chocolate-side up, on prepared tray. Let chocolate set before serving.
