Tuna And Olive Citrus Salad
- 4 None eggs
- 1-2 None garlic cloves, crushed
- 3-4 tbsp white wine vinegar
- 1/2 tsp paprika
- Pinch None caster sugar
- 4-5 tbsp olive oil
- 4 None oranges, fully peeled and sliced
- 2 None red onions, peeled and sliced
- 1 None romaine lettuce, trimmed and sliced
- 10 None red pepper-stuffed green olives, sliced
- 2 x 180 g cans tuna steak, drained
- Put the eggs in a saucepan and cover with water. Bring the water to a boil, then remove the pan from the heat and let eggs set in the water for 10 minutes. Rinse under cold water until cool enough to handle then peel and cut in half.
- Mix the garlic, vinegar, paprika and sugar together and season. Gradually whisk in the oil. Arrange the orange on a plate, using the picture as a guide. Top with the onion, lettuce, olives and tuna then drizzle with dressing. Serve with the eggs.
