Carrot And Apple Muffins
- 1 cup self-rising flour
- 1/2 cup unsalted butter, melted
- 1/3 cup light brown sugar
- 6 oz mixed dried raisins and apricots, chopped
- 2 None large eggs, lightly beaten
- 2 tbsp honey
- 1 None small carrot, peeled, finely grated
- 1 None small apple, finely grated
- 3 tsp finely grated orange zest
- 1/2 cup orange juice
- 1/4 cup sunflower seeds
- None None powdered sugar, to dust
- Preheat oven to 350u0b0F. Line a 12-cup muffin pan with paper liners.
- Sift flour into a large bowl. Add butter, sugar, dried fruit, eggs, honey, carrot, apple, orange zest and orange juice and stir until just combined. Distribute between paper liners and sprinkle with sunflower seeds.
- Bake for 20-25 mins, or until a skewer inserted in the center comes out clean. Let cool in tray for 5 mins then transfer to a wire rack to cool completely. Serve dusted with powdered sugar.
