Oatmeal-Raisin Pockets
- 1 3/4 c. all-purpose flour
- 1 tsp. ground cinnamon
- 1/2 tsp. baking powder
- 1/2 tsp. salt
- 1/4 tsp. baking soda
- 1/4 tsp. ground nutmeg
- 1 c. butter or margarine
- 1 c. packed brown sugar
- 1 egg
- 1 tsp. vanilla
- 1 1/2 c. quick cooking rolled oats
- 1/2 c. raisins
- 1/2 c. finely chopped nuts
- 3 Tbsp. orange marmalade
- Stir
- togethertlour,tinnamon,
- baking powder, salt, baking soda
- andtutmeg.
- In a large mixer bowl, beat butter until softened.
- Add brown sugar; beat until fluffy.
- Add eggs and vanilla
- and beat well.
- Add flour mixture and beat until well mixed.
- Stir in oats.
- Shape into 2 (7-inch) rolls.
- Wrap and chill for 6 hours or overnight.
