Sausage, Pea And Ginger Rice
- 1 tbsp vegetable or grapeseed oil
- 3 None eggs, lightly beaten
- 6 oz Chinese sausage, thinly sliced
- 2 cloves garlic, minced
- 2 tsp fresh ginger, finely grated
- 2.5 oz cold cooked jasmine rice
- 5.25 oz frozen peas, thawed
- 4 None spring onions, thinly sliced
- 2 tbsp light soy sauce
- 1 tbsp sweet soy sauce, plus extra, to drizzle
- Heat a wok or large frying pan over medium heat. Add 1/2 tbsp oil and swirl to coat surface. Add eggs and tilt to cover base. Cook for 1 min, or until bottom sets. Flip and cook for 2 mins. Transfer to a cutting board, roll up to form a log and slice thinly. Set aside.
- Add remaining oil to wok. Stir-fry sausage over high heat for 2 mins, or until crisp. Add garlic and ginger. Stir-fry for 30 seconds, or until fragrant. Add rice, peas and spring onions. Stir-fry for 2 mins, or until rice is heated through. Add soy sauce and sweet soy sauce. Toss to combine.
- Transfer rice to a serving platter. Top with omelette and drizzle with extra sweet soy sauce. Serve immediately.
