Sirloin Steak With Apple Pesto

  1. Preheat oven to 350u0b0F. Cook the pasta as per package instructions then drain and set aside to cool.
  2. For the pesto, blend 5 tbsp olive oil, cilantro, lemon zest, lemon juice, apples, ginger and sugar. Season then mix 1/2 of the pesto with the pasta, arugula and radishes. Set aside.
  3. For the steak, heat 2 tbsp oil in a frying pan and sear the steak on both sides over high heat for 1 min. Transfer to a baking tray and cook in the oven for 7-8 mins. Remove and allow to rest for 2-3 mins.
  4. To serve, cut the meat into slices, lay on a bed of pasta and top with the remaining pesto. Garnish with whole cilantro leaves.
