Sirloin Steak With Apple Pesto
- 250 g conchiglie pasta
- 7 tbsp olive oil
- 1 bunch coriander + some leaves for garnish
- 1 large lemon, zested and juiced
- 2 None green apples, cored and diced
- 1.5 cm ginger, peeled and chopped
- 60 g rocket
- 300 g radishes, finely sliced
- 550 g rump steak
- Preheat oven to 350u0b0F. Cook the pasta as per package instructions then drain and set aside to cool.
- For the pesto, blend 5 tbsp olive oil, cilantro, lemon zest, lemon juice, apples, ginger and sugar. Season then mix 1/2 of the pesto with the pasta, arugula and radishes. Set aside.
- For the steak, heat 2 tbsp oil in a frying pan and sear the steak on both sides over high heat for 1 min. Transfer to a baking tray and cook in the oven for 7-8 mins. Remove and allow to rest for 2-3 mins.
- To serve, cut the meat into slices, lay on a bed of pasta and top with the remaining pesto. Garnish with whole cilantro leaves.
