Date And Almond Cake
- 5.25 oz pitted dates, finely chopped
- 1 cup sliced almonds
- 1/2 cup brown sugar
- 1/4 tsp ground cardamom
- 1 1/4 cups unsalted butter, softened
- 1 cup granulated sugar
- 1 tsp vanilla bean extract
- 3 None eggs, beaten lightly
- 2 1/4 cups self-rising flour, sifted
- 1/2 cup milk
- None None powdered sugar, to dust
- Preheat oven to 350u0b0F. Grease and line an 8 inch springform cake pan.
- Combine dates, almonds, brown sugar and cardamom. Set aside.
- Cream butter, sugar and vanilla until pale and creamy. Add eggs, a little bit at a time, alternating with flour. Gradually add milk then remaining flour and a pinch of salt. Spread 1/2 batter into prepared pan. Sprinkle with 1/2 date mixture. Top with remaining batter then remaining date mixture.
- Bake for 1 hour then cover with foil and bake for another 15 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool.
- Dust cake with powdered sugar and serve.
