Date And Almond Cake

  1. Preheat oven to 350u0b0F. Grease and line an 8 inch springform cake pan.
  2. Combine dates, almonds, brown sugar and cardamom. Set aside.
  3. Cream butter, sugar and vanilla until pale and creamy. Add eggs, a little bit at a time, alternating with flour. Gradually add milk then remaining flour and a pinch of salt. Spread 1/2 batter into prepared pan. Sprinkle with 1/2 date mixture. Top with remaining batter then remaining date mixture.
  4. Bake for 1 hour then cover with foil and bake for another 15 mins, or until a skewer inserted in the center comes out clean. Let cool in pan for 10 mins then transfer to a wire rack to cool.
  5. Dust cake with powdered sugar and serve.
