Chocolate Cherry Ice Cream Sandwiches
- 4 cups vanilla ice cream, softened
- 4 oz white chocolate, grated
- 2 tsp rosewater
- None None Few drops pink food color
- 1 cup cherries, pitted and finely chopped, plus additional, to decorate
- 20 None chocolate wafer cookies
- 4 oz semi-sweet chocolate, melted
- Spoon ice cream into a large bowl. Beat in white chocolate, rosewater and food color. Fold in cherries. Pour into a freezer container. Freeze overnight, or until firm.
- Place a baking pan lined with parchment paper in the freezer.
- Sandwich 1/4 cup of ice cream mixture between 2 cookies, gently pressing together so ice cream reaches edge. Run a spatula around edges to smooth. Place on prepared pan.
- When ready to serve, stack ice cream sandwiches on a plate. Drizzle with semi-sweet chocolate and decorate with additional cherries. Serve immediately.
