Orange Slice Cake
- 1 c. butter Crisco
- 2 c. sugar
- 4 eggs
- 1 c. buttermilk
- 1/2 tsp. baking soda
- 1/2 tsp. salt
- 1 tsp. baking powder
- 4 c. plain flour
- 2 Tbsp. orange rind
- 2 c. chopped pecans
- 1 1/2 lb. orange slice candy, chopped
- 1 lb. pitted dates, chopped
- 1 can Angel Flake coconut
- 1 carton cherries (candied)
- 1 pt. fig preserves, drained
- 1 tsp. vanilla
- Cut candy, nuts and fruits in small pieces.
- Toss in 1 cup flour.
- Set aside.
- Cream shortening and sugar until fluffy.
- Add eggs one at a time.
- Add rest of flour alternately with milk; mix well.
- Add soda, baking powder and salt.
- Mix all other fruits. Put into well greased tube pan.
- Bake at 275u0b0 for about 2 1/2 hours.
- While still hot make glaze using 2 cups orange juice, 2 cups sugar and 1 tablespoon grated orange rind.
- Simmer at least 1 hour, then pour over cake.
