Easter Triple-Layer Mud Cake
- 1 cup (2 sticks) butter, chopped
- 7 oz milk chocolate, chopped
- 1 1/2 cups sugar
- 1 cup milk
- 2 cups flour
- 1 cup self-rising flour
- 2 None eggs, lightly beaten
- 1 tsp vanilla extract
- 2 1/2 cups heavy cream
- 8 oz strawberries, half mashed, half coarsely chopped

- 1/3 cup single cream
- 7 oz milk chocolate, coarsely chopped
- Preheat the oven to 323u0b0F. Lightly grease and flour three 8-inch round cake pans.
- Combine butter, chocolate, sugar and milk in a medium saucepan. Stir on low heat, without boiling, until smooth. Cool slightly.
- Sift combined flours into a large bowl. Carefully fold in chocolate mixture with eggs and vanilla. Divide among prepared pans. Bake for 25-30 mins until toothpick inserted into center comes out clean. Cool in pans 10 mins. Remove from pans; cool completely on wire rack.
- For the chocolate ganache, bring light cream to a boil in small saucepan on medium heat. Remove from heat. Add chocolate and stir until melted.
- Beat heavy cream in a large bowl with electric mixer until soft peaks form. Lightly swirl mashed and chopped strawberries into cream.
- Place 1 cake layer on a serving platter. Spread with half the strawberry cream mixture. Repeat layers, finishing with cake. Spread ganache over top. Decorate for Easter with chocolate bunnies, flowers, petals or eggs.
