Easter Triple-Layer Mud Cake

  1. Preheat the oven to 323u0b0F. Lightly grease and flour three 8-inch round cake pans.
  2. Combine butter, chocolate, sugar and milk in a medium saucepan. Stir on low heat, without boiling, until smooth. Cool slightly.
  3. Sift combined flours into a large bowl. Carefully fold in chocolate mixture with eggs and vanilla. Divide among prepared pans. Bake for 25-30 mins until toothpick inserted into center comes out clean. Cool in pans 10 mins. Remove from pans; cool completely on wire rack.
  4. For the chocolate ganache, bring light cream to a boil in small saucepan on medium heat. Remove from heat. Add chocolate and stir until melted.
  5. Beat heavy cream in a large bowl with electric mixer until soft peaks form. Lightly swirl mashed and chopped strawberries into cream.
  6. Place 1 cake layer on a serving platter. Spread with half the strawberry cream mixture. Repeat layers, finishing with cake. Spread ganache over top. Decorate for Easter with chocolate bunnies, flowers, petals or eggs.
