Banana Caramel Layer Cake

  1. Preheat the oven to 350u0b0F. Grease and lightly flour a 9-inch Bundt pan.
  2. Mix cake mix, eggs, oil and 1 cup water in a large bowl with an electric mixer until well blended. Add mashed bananas and beat 2 mins. Spread batter in prepared pan.
  3. Bake for about 40 mins or until toothpick inserted into center come out clean. Cool in pan for 10 mins. Remove from pan; cool completely on a wire rack.
  4. Beat the cream in a small bowl with an electric mixer until soft peaks form.
  5. Cut the cake into 3 layers horizontally. Spread the bottom layer with 1/3 of the caramel, then top with about 2/3 of the whipped cream and banana slices. Repeat with the next layer using another 1/3 of the caramel and all the remaining whipped cream and banana slices. Replace the top of the cake.
  6. Whisk the remaining caramel with about 1 tbsp of boiling water. Drizzle over the cake.
