Prune Clafoutis
- 1/2 cup brandy or Cointreau
- 1/2 cup granulated sugar
- 2 cups pitted prunes
- 1 cup flour
- 1 None orange, peel finely grated
- 1 1/4 cups milk
- 3 None eggs
- 1/4 cup powdered sugar
- Preheat the oven to 350u0b0F. Generously grease an 8-inch flan dish with butter.
- Heat brandy and half the granulated sugar in a small saucepan on medium heat, stirring until sugar has dissolved. Add prunes; cook for 5 mins. Cool. Drain prunes, reserving liquid.
- Sift flour into a large bowl with a pinch of salt. Stir in remaining sugar and orange peel. Whisk milk, eggs and reserved prune liquid in a medium bowl. Stir into flour mixture until smooth. Pour batter into prepared dish; sprinkle with prunes.
- Bake for 30-35 mins, until puffed and golden. Dust with powdered sugar and serve immediately.
