Spicy Chocolate Cherry Cobbler
- 1/2 lb dark chocolate, chopped
- 9 tbsp butter, chopped
- 2/3 cup sugar
- 1 None red chili pepper, deseeded, finely chopped
- 1/4 lb cherries, de-stoned and chopped
- 1 1/4 cups flour, sifted
- 1/4 cup ground almonds
- 2 None large eggs, lightly beaten
- None None cocoa powder, for dusting
- Preheat oven to 300u0b0F. Lightly grease a 7x11 inch baking pan. Line base and sides with parchment paper, extending paper 3/4 inch above the pan edge.
- For the batter, combine chocolate, butter, sugar and chili pepper in a small saucepan. Stir over low heat until smooth. Transfer to a large bowl. Cool for 10 mins. Lightly blend in cherries, flour, almonds and eggs until well combined. Pour mixture into prepared pan and smooth the top. Bake for 35-40 mins, until a skewer comes out clean. Cool in pan. Cut into squares and dust with cocoa powder to serve.
