Lamb And Sweet Potato Curry With Garlic Naan

  1. For the curry, heat oil in a large saucepan on medium. Cook sweet potato and pepper 3-4 mins, until golden. Transfer to a bowl. Brown lamb in same pan 6-8 mins, breaking up lumps with a spoon. Stir in curry paste and cook, stirring, 1-2 mins, until fragrant. Return sweet potato to pan, along with tomatoes and 1/2 cup water. Simmer 4-5 mins, until sweet potato is tender and sauce thickens.
  2. Meanwhile, for the garlic naan, brush naan bread with butter and sprinkle with garlic. Broil under a preheated broiler 1-2 mins, until crisp. Cut into wedges. Serve with curry, yogurt, cucumber ribbons and mint.
