Lamb And Sweet Potato Curry With Garlic Naan
- 1 tbsp vegetable oil
- 1 lb sweet potato peeled, cubed
- 1 None green pepper, seeded, chopped
- 1 lb ground lamb
- 2 oz rogan josh curry paste
- 14 oz can diced tomatoes
- None None Garlic Naan
- 2 pieces plain naan bread
- 2 tbsp butter, melted
- 2 cloves garlic, finely chopped
- 8 oz plain Greek-style yogurt, to serve
- 1 None mini cucumber, sliced into ribbons, to serve
- 1 tbsp mint leaves, to serve
- For the curry, heat oil in a large saucepan on medium. Cook sweet potato and pepper 3-4 mins, until golden. Transfer to a bowl. Brown lamb in same pan 6-8 mins, breaking up lumps with a spoon. Stir in curry paste and cook, stirring, 1-2 mins, until fragrant. Return sweet potato to pan, along with tomatoes and 1/2 cup water. Simmer 4-5 mins, until sweet potato is tender and sauce thickens.
- Meanwhile, for the garlic naan, brush naan bread with butter and sprinkle with garlic. Broil under a preheated broiler 1-2 mins, until crisp. Cut into wedges. Serve with curry, yogurt, cucumber ribbons and mint.
