Jam Brioches

  1. Mix flour, sugar, salt, softened butter and egg in a bowl. Heat 3/4 cup milk until lukewarm, dissolve yeast in it and stir into the dough. Knead dough for 2 mins until smooth and pliable. Cover, and leave in a warm place for 30-40 mins to rise.
  2. Preheat oven to 400u0b0F. Grease 12 brioche molds (3 inch diameter x 1 1/2 inch high). Form two thirds of the dough into 12 large balls and place in the molds. Form remaining dough into 12 small balls. Cover, and leave all of the dough for 20 mins to rise.
  3. Beat egg yolk with 1 tbsp milk to make egg wash. Use the handle of a wooden spoon to make an indentation in each large dough ball and fill with 1 tsp jam. Then brush one side of each of the small dough balls with the egg wash and place on top of large dough balls.
  4. Brush tops of the brioche with egg wash then bake for about 15 mins. Remove and leave to cool for 10 mins. Turn out of molds and dust with powdered sugar sugar. Serve warm or cold.
