Triple Chocolate Chunk Macadamia Nut Cookies
- 1/3 cup self-raising flour
- 1/4 cup all purpose four
- 1/3 cup cocoa
- 1 1/4 cups sugar
- 1/3 cup brown sugar
- 3 oz dark chocolate, coarsely chopped
- 3 oz white chocolate, coarsely chopped
- 1/2 cup macadamia halves, roughly chopped
- 11 tbsp butter, melted
- 1 None egg, plus 1 yolk extra
- 1 tsp vanilla extract
- None None chocolate icing, to serve (optional)
- Preheat oven to 400u0b0F. Lightly grease and line four baking trays with baking paper.
- Into a large bowl, sift combined flours and cocoa. Stir in sugars. Add chocolate, nuts, butter, egg, yolk and vanilla. Mix well.
- Roll heaped tablespoons of mixture into balls. Arrange on trays, 2 inches apart. Flatten slightly with a fork.
- Bake for 8-10 mins, or until firm. Cool on trays. Serve with chocolate icing, if desired.
