Char Siu Pork With Apple
- 1 1/3 lbs pork, sliced
- 3/4 cup char siu (Chinese barbecue sauce)
- 2 tbsp rice bran oil or other cooking oil
- 2 None apples, cored and sliced
- 2 None red onions, peeled and finely sliced
- 8 oz canned water chestnuts, drained
- 1 bunch spinach, stalks trimmed
- 1 tbsp sesame seeds, toasted
- None None Steamed rice, to serve
- Place the pork and char siu in a bowl and toss the pork to coat. Cover and place in the fridge to marinate for 1 hour.
- Heat 1tbsp of rice bran oil in a wok or large frying pan over a medium heat. Add the apples and onions and cook for 5 mins, stirring, until the onion has softened and apples are starting to brown. Remove from the wok and set aside.
- Heat the remaining oil in the wok. Stir-fry the pork in batches for 3-5 mins, until cooked through, then return all the pork to the wok. Next, return the apples and onions to the wok with the water chestnuts and spinach and stir-fry for 2-3 mins, until the water chestnuts are heated through and the spinach has wilted.
- Sprinkle with sesame seeds and serve with steamed rice.
