Malaysian Sambal Shrimp
- 2 tbsp vegetable oil
- 1 None onion, thinly sliced
- 1 lb large shrimp, peeled and deveined
- 2 tbsp sambal oelek (Southeast Asian chile paste)
- 9 oz green beans, trimmed
- 2 tbsp sugar
- 1 tbsp soy sauce
- 1 None long red chili pepper, thinly sliced (optional)
- 1/4 tsp sesame oil
- None None Steamed jasmine rice, to serve
- None None Lime wedges, to serve
- Heat oil in a large wok on medium heat. Stir-fry onion for 1-2 mins or until tender.
- Add shrimp and sambal. Stir-fry 2-3 mins until fragrant and shrimp just change color.
- Add green beans, sugar, soy sauce and fresh chili pepper, if desired. Stir-fry 2-3 mins or until shrimp are cooked through.
- Drizzle with a few drops of sesame oil. Serve with steamed rice and lime wedges.
