Pork Rack With Apples
- 2 tbsp olive oil
- 2 tbsp chopped rosemary
- 2 cloves garlic, crushed
- 2 None bay leaves, torn
- 1 tsp fennel seeds
- 2 1/4 lbs rack of pork (pork rib roast), trimmed, skin scored standing pork loin rack
- 2 tbsp butter
- 1 None red onion, thinly sliced
- 6 None Granny Smith apples, cored, peeled and sliced into rings
- 1 None lemon, peel sliced into strips and lemon juiced
- Combine oil, rosemary, garlic, bay leaves and fennel in a small bowl. Rub all over pork. Refrigerate 30 mins to marinate. Season to taste.
- Preheat the grill on medium. Lightly grease a medium roasting pan with butter. Place onion, apple, and lemon peel and juice into pan. Toss well and spread evenly in pan. Season to taste.
- Grill pork, skin-side down, 10-15 mins, turning on all sides until skin is crisp. Transfer to roasting pan, skin-side up.
- Bake in covered grill 45 mins, until internal temperature on a thermometer reads 145u0b0F. Remove pan from grill. Cover loosely with foil and stand 15 mins.
- Slice pork and serve with apple and onion.
