Raspberry And Turkish Delight Cupcakes
- 8 tbsp (1 stick) butter, at room temperature, plus additional 2 tbsp, at room temperature
- 1/2 cup granulated sugar
- 2 None eggs
- 1 1/2 cups self-rising flour
- 2/3 cup milk
- 1 cup fresh or frozen raspberries, plus additional, to decorate
- 3 oz Turkish Delight, chopped
- 1 1/4 cups powdered sugar
- Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners. Beat butter and granulated sugar in a large bowl with an electric mixer until fluffy. Add eggs, one at a time, beating well after each addition.
- Fold in flour and milk until just combined. Fold in raspberries and Turkish Delight. Spoon mixture into prepared pan.
- Bake for 25 mins or until a toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on a wire rack.
- Sift powdered sugar into a medium bowl. Stir in additional 2 tbsp butter and 2 tbsp boiling water to make a smooth, thick icing. Add a little more boiling water, if necessary. Spread icing over cooled cupcakes. Top with additional raspberries.
