Raspberry And Turkish Delight Cupcakes

  1. Preheat the oven to 350u0b0F. Line a 12-cup muffin pan with paper liners. Beat butter and granulated sugar in a large bowl with an electric mixer until fluffy. Add eggs, one at a time, beating well after each addition.
  2. Fold in flour and milk until just combined. Fold in raspberries and Turkish Delight. Spoon mixture into prepared pan.
  3. Bake for 25 mins or until a toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on a wire rack.
  4. Sift powdered sugar into a medium bowl. Stir in additional 2 tbsp butter and 2 tbsp boiling water to make a smooth, thick icing. Add a little more boiling water, if necessary. Spread icing over cooled cupcakes. Top with additional raspberries.
