Quick Chili
- 2 tbsp oil
- 1 lb ground beef
- 2 tbsp tomato puree
- 1 14 oz can sweet corn
- 1 16 oz can kidney beans, drained and rinsed
- 4 None roasted red peppers (from a jar), cut into strips
- 1 28 oz can chopped tomatoes
- 14 oz can baked beans
- 1 tsp paprika
- 1 tsp cayenne pepper
- None None Pinch of sugar
- 1 cup sour cream
- 4 None whole green chilies (from a jar)
- None None Tortilla chips, to serve
- Heat the oil in a saucepan and cook the meat for 5 mins. Stir in the tomato puree. Add the sweet corn and kidney beans and continue cooking for 3 mins. Add the peppers, tomatoes, baked beans and 2 cups of water. Stir and simmer for 5 mins. Add the paprika and cayenne pepper and season with salt, black pepper and a pinch of sugar.
- Spoon into bowls and top with a dollop of sour cream and a whole chilli. Serve with tortilla chips.
