Curried Sausages And Cilantro Noodles
- 2 tbsp vegetable or peanut oil
- 6 None thick pork sausages
- 1 None medium Spanish onion, peeled, thinly sliced
- 1 None medium red pepper, thinly sliced
- 2 tbsp korma curry paste
- 2 tsp cornstarch
- 1/2 cup chicken stock
- 5 oz broccoli, cut into small florets
- 3 oz snow peas, trimmed
- 14 oz Japanese udon noodles
- None None fresh cilantro sprigs, to garnish
- Heat 1 tbsp oil in a large frying pan over medium heat. Cook sausages, turning, for 4-5 mins, or until cooked through. Remove from pan. Let cool slightly then slice thickly.
- Add remaining oil to pan. Cook onion for 2 mins, or until soft. Add pepper and cook for 2 mins. Stir in curry paste and cook for 1 min, or until fragrant. Whisk cornstarch and stock until smooth then gradually add to pan. Bring to a boil then return sausage to pan along with broccoli and snow peas. Add noodles and cook for 2 mins, or until heated through.
- Spoon curry into serving bowls. Serve topped with cilantro.
