Thai Beef Salad
- 1 1/3 lbs sirloin steak, fat trimmed
- 1/2 cup olive oil
- 2 tbsp fish sauce
- 2 tbsp sweet chilli sauce
- 2 tbsp lime juice
- 2 cloves garlic, crushed
- 1 tbsp finely grated fresh ginger
- 1 None fresh long red chili pepper, finely chopped
- 1/2 None cucumber, halved lengthwise and sliced
- 8 oz cherry tomatoes, quartered
- 1 small yellow pepper, cut into short lengths
- 1 small red onion, thinly sliced
- 1/2 cup loosely packed mint leaves, to taste
- 1/2 cup loosely packed cilantro leaves, to taste
- 2 oz mixed lettuce leaves
- None None Lime wedges, to serve
- Place beef in a shallow glass dish. Whisk oil, sauces, lime juice. garlic and ginger in a medium bowl. Pour 1/2 the dressing over beef; turn to coat. Cover with plastic wrap; refrigerate for 15 mins to marinate. Add chili peppers to remaining dressing; set aside.
- Meanwhile, combine cucumber, tomato, pepper, onion, mint, cilantro and lettuce in a large bowl.
- Heat a grill pan on high heat or preheat the grill to medium-high. Drain beef. Grill for 8 mins each side for medium-rare or until cooked to desired doneness. Transfer to a plate; cover with foil. Let stand for 5 mins; slice thinly. Add beef to salad in bowl; drizzle with chili dressing. Toss to combine. Serve immediately with lime wedges.
