Marble Cake With Cream Cheese Icing
- 2 1/2 cups self-rising flour
- 1 1/4 cups granulated sugar
- 1 cup plus 2 tbsp milk
- 3 None eggs
- 8 tbsp (1 stick) butter, melted
- 2 tbsp unsweetened cocoa powder
- None None FOR THE CREAM CHEESE ICING
- 1 tub (8 oz) spreadable cream cheese, at room temperature
- 2 tbsp powdered sugar
- 1/2 tsp vanilla extract
- Few drops red food color
- Preheat the oven to 350u0b0F. Grease a deep 8-inch square or round cake pan and line the bottom with parchment paper.
- Sift the flour and granulated sugar into a large bowl. Whisk 1 cup milk, eggs and melted butter in a medium bowl. Add to the dry ingredients; fold in to combine, but don't overmix. Divide the batter evenly between 2 bowls. Sift the cocoa powder over one bowl, then add 2 tbsp of milk. Mix until smooth.
- Randomly drop spoonfuls of batter from both bowls into the prepared pan. Using a skewer, swirl the mixture to create a marbled effect.
- Bake for 40 mins, or until toothpick inserted into center comes out clean. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
- For the cream cheese icing, place the cream cheese in a bowl. Sift the powdered sugar over the cream cheese. Add the vanilla extract and a few drops of food color. Mix until well combined. Spread the icing over the cake. Put a few drops of food color randomly over the iced cake, then use a skewer to swirl through the icing.
