Cherry And Almond Birthday Cake
- 2/3 cup granulated sugar
- 5 tsp baking powder
- 1 cup cornstarch
- 2 2/3 cups all-purpose flour
- 1 tsp vanilla extract
- 1 cup butter, softened + 2 tbsp
- 4 None eggs
- 2/3 cup 2% or whole milk
- 3.5 oz candied cherries, chopped
- 1 cup almonds, chopped
- 1 1/4 cups powdered sugar
- 4 tbsp lemon juice
- 1 drop red food coloring
- None None candy and candles, to decorate
- Preheat oven to 325u0b0F. Grease a 9 inch cake pan. In a bowl, whisk together sugar, baking powder, cornstarch, 2 1/2 cups flour and a pinch of salt. Add vanilla extract, butter, eggs and milk. Toss cherries with remaining flour and fold into mixture, along with almonds. Transfer to prepared pan and bake for 1 hour 10 mins, until a skewer comes out clean. Remove from pan and allow to cool.
- Mix powdered sugar, lemon juice and food coloring until smooth. Pour over cake and allow to drizzle down sides. Allow to set. Decorate with candies and candles.
