Green Beans With Cashews(Servings: 8)

  1. Cut ends off beans.
  2. Cut beans in 2-inch pieces and place in a large saucepan with boiling salted water.
  3. Cover and cook until tender, but still crisp, 7 to 10 minutes.
  4. Drain; rinse under cold water to stop cooking.
  5. May be refrigerated overnight.
  6. Frozen green beans make this a quicker process without sacrificing taste. Before serving beans, melt butter or margarine in a large skillet.
  7. Saute onion until tender.
  8. Add green beans and cashews. Cook and stir until heated through.
  9. Stir in lemon juice and parsley.
  10. Season to taste with salt and white pepper.
