Rosmary Dijon Beef Kebabs With Vegetables
- 1/4 cup vegetable oil
- 1/4 cup rice wine vinegar
- 1 tbsp fresh rosemary leaves, minced, plus 6 sprigs
- 1 tbsp fresh thyme leaves, minced
- 1 tbsp Dijon mustard
- 1 tsp sugar
- 1 tsp minced garlic
- 1 None lemon, zested and juiced
- 2 None large zucchini or yellow squash, halved lengthwise and sliced diagonally
- 2 None bell peppers, seeded and chopped
- 1 None small red onion, cut into wedges
- 1 1/2 lb boneless beef sirloin steak, cut into 1 1/2 inch cubes
- Whisk together oil, vinegar, minced herbs, mustard, sugar, garlic, 1 tbsp lemon juice and 1 tsp lemon zest. Season. Toss vegetables and meat with 1/2 of lemon-herb mixture. Cover and marinate in refrigerator for at least 30 mins.
- Meanwhile, soak rosemary sprigs in ice water for at least 30 mins. Remove from water and pat dry. Remove vegetables and meat from marinade. Discard used marinade.
- Preheat grill. Alternately thread meat and vegetables onto rosemary sprigs. Grill for 8-10 mins, or until thermometer inserted into meat reads 145u0b0F for medium rare, brushing with remaining lemon-herb mixture occasionally. Arrange skewers on a serving platter.
