Barb'S Quick Scalloped Potatoes
- 2 lb. frozen hash brown potatoes
- 2 c. shredded Cheddar cheese
- 1 c. cream of chicken soup
- 1 c. sour cream
- 1 1/2 tsp. salt
- 1 medium onion, diced
- 1/2 c. butter or margarine
- 2 c. corn flakes
- 1/4 c. butter, melted
- 2 lb. fresh green beans (regular or Kentucky Wonders)
- 3 to 4 smoked ham hocks or smoked turkey wings, precut into small pieces
- 2 Tbsp. pan drippings (optional)
- 1/2 tsp. salt
- 1/2 tsp. pepper
- water (enough to cover the beans and ham hocks in a large pot)
- Rinse off ham hocks and place in a large pot (5-quart size). Cook ham hocks until tender.
- Add the green beans and add more water, if necessary.
- Add the salt, pepper and bacon drippings. Continue to cook until the beans are tender.
