Apple Teacakes
- 8 tbsp (1 stick) butter, softened
- 3/4 cup sugar
- 1/2 tsp almond extract
- 2 None eggs
- 1 1/2 cups self-rising flour, sifted
- 1/2 cup flaked coconut
- 2 small red apples, cored and thinly sliced

- 3 tbsp butter
- 2 tbsp honey
- 1/2 cup sliced almonds, toasted
- Preheat the oven to 350u0b0F. Lightly grease an 8-loaf mini loaf pan. Line bottoms and long sides with baking paper.
- Beat butter, sugar and almond extract in a large bowl with an electric mixer until light and fluffy. Add eggs, one at a time, beating well after each addition. Fold in flour and coconut. Spoon into prepared pan. Arrange apple slices over top of each.
- Bake for 15-20 mins, until toothpick inserted into center comes out clean.
- For the topping, place butter and honey in a microwave-safe bowl. Microwave on medium-high 1 min, stirring once, until butter has melted and mixture is bubbling. Brush over cakes and sprinkle with almonds. Cool in pan 5 mins. Remove from pan; cool completely on wire rack.
